0.5 cups light sour cream 0.5 cups Heavy Cream 1 each prepared and prebaked pizza crust with herbs and cheese 2 each Sunkist® lemons , sliced paper-thin, any seeds removed 2 tablespoon olive oil, to taste freshly ground pepper 6 each oz. cold-smoked salmon (lox), cut in thin strips 2 tablespoon capers, drained, fresh dill for garnish, Can substitute small cooked shrimp for salmon |

| In small bowl, combine sour cream and heavy cream. Cover and leave at room temperature for 1 hour. Place prepared pizza crust on pizza stone or baking sheet. Leaving 1 inch crust, cover remaining surface with single layer of lemon slices. Drizzle olive oil over lemon slices; sprinkle with pepper. Bake at 450 degrees F for 10 minutes. Lemon slices should start to crisp but not char. Remove from oven and let cool for 5 minutes. Spread cream mixture carefully over lemon slices. Arrange smoked salmon over cream, in a pinwheel pattern. Sprinkle with capers; garnish with fresh dill. |
