3 tablespoon butter or margarine 0.25 teaspoon garlic salt 1 each lb. (thin pieces) calamari (giant squid) 0.5 each Sunkist® lemons -grated peel and juice 1 tablespoon chopped green onion (scallion) 1 tablespoon chopped parsley |

| Directions: | ||
| In a large skillet, heat the butter with the garlic salt; sauté the calamari for 2 minutes on each side. (Calamari will remain white when fully cooked; do not brown.) Add lemon peel and juice, green onion, and parsley; sauté briefly. Garnish with lemon cartwheel slices, if desired. SOLE VARIATION: If calamari is unavailable, substitute 1 pound sole fillets. Proceed as above, sautéing the fillets for 3 to 4 minutes on each side, or until lightly browned and fish flakes easily with a fork. |
