Ingredients:
4 each medium baking potatoes
4 each slices lean turkey bacon
1 each Sunkist® lemon -grated peel and juice, seasoned salt, freshly ground pepper
2 tablespoon Vegetable oil
1 cup reduced fat cheddar cheese, shredded
0.25 cups fat free sour cream or plain yogurt
2 tablespoon chives, finely chopped
Directions:
Scrub potatoes and pierce skins. Place in preheated 425 degree F. oven; bake for 1 hour or until soft.

Meanwhile, in small skillet, cook bacon over medium heat until crisp. Drain on paper towels, then crumble. Cut baked potatoes in half lengthwise. With small spoon, scoop out the pulp, leaving a 1/4 inch thick shell. Save pulp for another use.

Shells in half crosswise; place on baking sheet. Drizzle each shell generously with lemon juice. Season with salt and pepper to taste. Drizzle with vegetable oil. Bake for 15 minutes, or until crisp.

Remove skins from oven; sprinkle with cheese and return to bake for 5 additional minutes. Top skins with a small dollop of sour cream, sprinkle with grated lemon peel, chives and bacon crumbles.
