Ingredients:
1 each medium California avocado, ripe but on the firm side
6 each large eggs, slightly beaten with 1/2 cup milk
0.5 cup grated monterey jack cheese
0.5 cup diced scallions
0.5 cup seeded, diced fresh tomato, salt & pepper to taste, Pam cooking spray
Directions:
1. Spray frying pan with Pam cooking spray.
2. Over low heat quickly saute scallions.
3. Pour beaten eggs into pan.
4. Cover for 3 minutes over low heat.
5. Flip egg over and layer cooked side with avocado, cheese and tomato.
6. Cover again for 3 minutes or until cheese melts.
7. Fold omelette onto itself and season with salt & pepper.
8. Cut omelette into 4 servings and enjoy!
