Directions:
Mix ingredients in the order given.Pour into ungreased square cake pan.
Bake in a 350 degree oven for 30-35 minutes.
Frost or serve plain.
Various dairyfree dessert confections can be found to moisten this up a bit.

1 cup pitted chopped dates
0.75 cup raisins or currants
0.5 teaspoon nutmeg
1 teaspoon vanilla
Directions:
Put all except nutmeg and vanilla into a large, heavy sauce pan.Bring to a boil, reduce to a simmer and simmer, stirring constantly for 10 minutes.
Remove from heat and add nutmeg and vanilla, stir.
Serve warm or chilled.

Directions:
To prepare the dates for stuffing, cut each along one side and remove the pits. In a bowl, combine the confectioners' sugar, condensed milk, and lemon peel (mixture will be stiff).Stir in chopped nuts and apricots.
Dust hands with additional confectioners' sugar and shape mixture into small balls (about 3/4 inch); stuff into prepared dates.
Top each with a nut quarter or half.

Directions:
In a large bowl, sift together the flour and salt.With a pastry blender or two knives, cut in shortening until pieces are the size of small peas.

Directions:
Preheat oven to 350 deg.In a large bowl combine and mix well berries, bread, soy milk, maple syrup, cane sugar, arrowroot powder and optional lemon juice.
Pour into an attractive glass or corning ware dish.
Combine nuts, maply syrup and almond extract.
Crumble over main dish (leaving about a 1/4" air space around edge to let steam escape) and bake uncovered for 45 minutes.

Peel the pummelo and orange so no white membrane is left.With a sharp knife, section the fruit by cutting it away from the membrane.
Mix the fruit in a bowl with Sucanat and coconut.
You can make endless variations of this by adding other favorite citrus fruits, nuts, etc., but this basic recipe is really good.

Directions:
Pre-heat the oven to 200 degrees C.Grease a shallow baking tray.
Rub the margarine into the flour until the mixture resembles breadcrumbs.
Peel, core and grate the apples.
Mix the apples and sugar with the mixture, add a little milk to make a firm but dry mixture.
Spread the mixture in the tray and bake for about half an hour.
Allow to cool, cut into squares and serve as cake.

Directions:
Preheat oven to 375 degrees F.Lightly grease 17x14 inch baking sheet.
Sift together flour, baking soda, cinnamon, nutmeg.
In large bowl, combine butter and sugar, beating well with wooden spoon.
Add egg and Sunkist orange peel, beat well.
Gradually stir in dry ingedient mixture.
Stir in Sunkist orange and apple pieces, oats and nuts.

Directions:
Crush the biscuits finely and mix with melted margarine.Press into cheesecake tin. In a blender, combine the tofu, golden (or maple) syrup, lemon juice and rind, tahini and vanilla.
Blend.
Add raisins to the filling and spoon over the base.
Sprinkle with cinnamon.
Bake in a moderate oven for 25-30 minutes.
Cool in oven.
The cake is firmer if served two hours later.
