Berry-licious Ice Cream with Dark Chocolate Chunks
By: Jeremy C.
| Description: | If you don't love the wonderful tart taste of delicious raspberries or blueberries paired with the deep richness of a deep dark chocolate, this is not the ice cream for you. This is not the kind of ice cream you would sit down and eat a bowl of, more the kind you'd serve alongside a very sweet vanilla cake or hot Irish coffee. Have your electric freezer ready to go...... | |
| Time: | 30 min (10 min to prepare, 20 min to cook) | |

| Ingredients: | ||
|
10 OZ fresh or frozen raspberries, separated 1/2 C sugar 2/3 C Heavy Cream -- (or whipping cream) 1 tbsp vanilla 4 OZ Dark Chocolate (I use 60% or more Cacao, but I'm bitter that way) 1/4 C whole milk |
||
| Directions: | ||
| 1. Whip cream to increase volume, then set aside. 2. In a blender or food processor, blend 8 oz of berries, sugar, vanilla and milk until completely smooth. 3. Press mixture through cheesecloth or fine strainer to remove any fine particles from the berries. 4. Chop the chocolate into bite-sized chunks. 5. Pour the berry mixture into a large bowl with a spout. 6. Fold in the whipped cream. 7. Fold in the chocolate chunks and the reserved whole berries. The mixture will be stiff. 8. Turn on the beater in your ice cream freezer. 9. Pour the mixture into your freezer and follow your freezer directions. |
