5 tablespoons corn starch (or 3/4 cup rice flour) 0.5 teaspoon salt 1 teaspoon vanilla extract 0.75 cup honey or dried dates 0.333333 cup Carob Powder 1 cup cashews, raw 4 cups water |

| Directions: | ||
| Blend 1 cup cashews with one cup water for 2 or 3 minutes. Add one more cup water and blend a few minutes more. Add all the rest of the ingredients except the rest of the water, with the blender running. Blend until well mixed. Pour the mixture into a large sauce pan. Add two more cups of water. Cook over mediup heat, stirring constantly, until pudding is thickened. Pour into a prebaked pie shell or into serving dishes and refrigerate. Serve chilled with tofu cream or cashew cream. If you have a Vitamix, boil the four cups of water and blend until thick. You will not have to cook the filling. |
