Ingredients:
2 tablespoon tahini
1 tablespoon finely grated lemon rind, few drops vanilla essence (optional)
3 tablespoon agar flakes, concentrated apple juice and/or malt syrup as sweeteners, to taste
1 pinch sea salt
450 ml water
Directions:
Bring the water to the boil, add all the ingredients and simmer for 10 minutes, until the agar flakes are completely dissolved.

Pour this mixture into a glass or ceramic container and leave to cool and set (approx 1 - 2 hours).

Blend into a creamy consistency (either by hand or with a blender), adding a little water or fresh apple juice if the consistency is too thick.
Serve the mousse chilled or at room temperature.
