2 each medium sized California Navel Oranges 1 cup fresh ricotta cheese 1 cup cr?me fra?che or sour cream - as needed for garnish 0.25 cups 1 1/2 tablespoons sugar 4 each sprigs of fresh mint |

| Zest one orange into a medium-sized mixing bowl. Add 1 ½ tablespoons sugar, ricotta cheese and the crème fraîche and whip together. Keep chilled. Using a sharp paring knife, remove the skin and pith from the oranges to expose the flesh. Slice the oranges horizontally into approximately six even wheels, ¼ inch thick. Lay the orange wheels out onto a flameproof work surface and coat generously with sugar. Caramelize the oranges with a torch until nicely browned. In the center of four plates, place one caramelized orange wheel. Top each wheel with a dollop of the fiore di latte and top each dollop with another wheel off to one side. Continue this process once more finishing with last of the orange wheels. Garnish each dish with a sprig of fresh mint. |
