1 package Spice Cake (Betty Crocker or whatever you can find) 6 OZ Apple Sauce (use enough to equal the equivalent of oil indicated on the box) 2 medium Egg Whites (Use the equivalent of eggs indicated on the box) 1/2 can Pumpkin 1 can Cream cheese frosting, light 1 OZ Red and yellow food coloring 1 package Marshmallow pumpkins |
| Directions: | ||
| Prepare the cake batter as indicated on the box. Replace the oil with apple sauce and replace the eggs with egg whites to make the cake more moist and lower in fat. Add 1/2 a can of pumpkin to the batter and mix well. Cook the cake as indicated on the box. You might have to add a little more time, since the pumpkin will make it a little more runny but make sure not to overcook or it will be dry! Stick a toothpick in the cake to check. Mix red and yellow food coloring into the cream cheese frosting (use light or low sugar if you can!) until you have a good orange color. Once the cake has cooled, frost the cake. Put marshmallow pumpkins of top with small swords or knives sticking out of them with red food coloring dripping down to make it a Pumpkin Massacre Cake! |
