| Description: | I made these "cake balls" for the recent Happy Tails fundraiser. They are made of white cake, frosting, cream cheese, and white chocolate melts. The process takes about two days or one full day and is pretty time consuming due to the chocolate coating, but it is well worth their delicious-ness! | |
| Time: | 4 hr (2 hr to prepare, 2 hr to cook) | |
| Meal type: | Dessert | |
| Ethnicity: | ||
| Number of Servings: | 15 | |
| Ingredients: | ||
|
1 package White cake mix (whichever brand you prefer) 1/3 package Creamy cream cheese frosting (whichever brand) 1/4 package Regular cream cheese (optional) 2 package Chocolate candy melts (I used Wilton brand because they melt more easily) |

| Directions: | ||
| You will need the basic ingredients to add to the cake mix as well (water, vegetable oil, & 2 eggs or 3 egg whites.) 1) bake the cake according to the box's directions and let cool over night (add food coloring to the mix if desired). 2) Once cooled, toss out the edges of the cake (this part is optional). Cut the remaining cake into squares and add them into a large bowl. 3) Crumble the cake into small pieces (Using a fork works fine). 4) Once all crumbled, stir in your frosting and cream cheese. This is what will help form the cake ball shape. I use about 1/3 the container of frosting and 1/4 amount of the cream cheese (the added cream cheese is optional). Also, if you added food coloring to the cake, you will want to add a little to the frosting mixture as well. Mash the mixture together with your hands (wear gloves or a baggy over each hand for better sanitation). Once completely mixed together, you should have a big ball of cake. This is the step in which you would add in any chocolate chips, nuts, etc. to the cake. 5) Using an ice cream scooper, scoop out some cake and form them into balls (or whichever shape you prefer). 6) Place the balls onto a waxed paper sheet & place them in the freezer for about 20 minutes. 7) Begin melting your chocolate melts (I use the double-boiler method). I used Wilton brand chocolate melts (available at Michael's Crafts). Ghirardelli chocolate chips taste better but do not melt as easily, however. You may need to add in vegetable shortening to thin out the consistency. Add food coloring if you'd like, but you will need to make sure it is in the gel form rather than liquid. 8) Take out a few cake balls from the freezer. Working one by one, cover the cake ball with the melted chocolate. You will need a couple of spoon fulls for this. Mold and smooth the chocolate with the back side of the spoon and place the cake ball onto waxed paper again. This is when you would add any sprinkles, nuts, etc. to the top of the cake ball. 9) Leave out to cool or place them in the fridge. 10) Add an additional drizzle of the chocolate to the cake balls (optional) 11) Place them in a cupcake liner & enjoy!
