Directions:
Place water, tofu, sugar, cornstarch, oil and salt in a blender.Process until smooth.
Pour into a 2 qt sauce pan over medium heat.
Bring to a boil, stirring constanly with a wire whisk.
After the mixture thickens reduce heat to low and continue cooking and stirring for 1 minute longer.
Remove from heat and stir in lemon juice and zest.
Pour hot filling into pie crust.

Directions:
Throw all ingredients in your blender and blend until well combined.Pour into a well greased standard 9 inch/23cm pie dish and bake for about an hour at 180C/350F.
Test the pie with a skewer. I have had this pie take up to an hour and a half to set properly, depending on the oven.
If it starts to brown too much on the top – cover with foil to continue baking without ruining that gorgeous golden finish.

Directions:
Cream the butter until soft. Start to mix in the powdered sugar and continue adding until you read a stiff consistency. Add the lemon zest and honey – this will thin the frosting out slightly. Correct consistency with more powdered sugar.

Bring the water to the boil, add all the ingredients and simmer for 10 minutes, until the agar flakes are completely dissolved.Pour this mixture into a glass or ceramic container and leave to cool and set (approx 1 - 2 hours).
Blend into a creamy consistency (either by hand or with a blender), adding a little water or fresh apple juice if the consistency is too thick.
Serve the mousse chilled or at room temperature.
