1 medium onion, skin on, sliced in half 6 pieces black peppercorns 1 pieces bay leaf 2 pieces springs fresh thyme 1 package 3 1/2 pound chicken, giblets removed, rinsed and patted dry 1/2 cup plus 2 tablespoons mayonnaise 1 tablespoon dark sesame seed oil 2 tablespoons chives 2 tablespoons Finely chopped cilantro 3 pieces scallions, white and light green parts only 1 pint kosher salt--to taste 1 pinch pepper--to taste |

| Place onion, peppercorns, bay leaf and thyme in large pot. Add chicken and cover with enough water to cover. Cover and bring to a simmer. Then uncover and cook for 1 hour. Drain chicken. When chicken is cool enough to handle, remove the skin and discard. Shred the chicken from the bones and chop very fine. Refigerate, covered, until well chilled. In a small bowl, mix together the maynonnaise and sesame oil. Add this to the chicken and combine well. Add cilantro, chives, and scallions and combine well. Add sald and pepper to taste. Refrigerate until ready to use. |
