Description: This could be lunch or dinner. This is my favorite chicken salad recipe!
Time: 1 hr 20 min (20 min to prepare, 1 hr to cook)

Ingredients:
1 medium onion, skin on, sliced in half
6 pieces black peppercorns
1 pieces bay leaf
2 pieces springs fresh thyme
1 package 3 1/2 pound chicken, giblets removed, rinsed and patted dry
1/2 cup plus 2 tablespoons mayonnaise
1 tablespoon dark sesame seed oil
2 tablespoons chives
2 tablespoons Finely chopped cilantro
3 pieces scallions, white and light green parts only
1 pint kosher salt--to taste
1 pinch pepper--to taste
Directions:
Place onion, peppercorns, bay leaf and thyme in large pot. Add chicken and cover with enough water to cover. Cover and bring to a simmer. Then uncover and cook for 1 hour. Drain chicken. When chicken is cool enough to handle, remove the skin and discard. Shred the chicken from the bones and chop very fine. Refigerate, covered, until well chilled.

In a small bowl, mix together the maynonnaise and sesame oil. Add this to the chicken and combine well. Add cilantro, chives, and scallions and combine well. Add sald and pepper to taste. Refrigerate until ready to use.
Notes:

I first had this at a baby shower in little croissants; yummy! Now I have it on bread, rolls, and regular croissants. I have made this ahead for traveling. I just make the sandwiches in the car. Nate addes cheese to his. Nathan also like more mayo on his, but I like the recipe just the way it is. So think of your family's likes and dislikes. :) Enjoy! Again to save time. I used to chop it finely and it took too long. I also use Mircle Whip instead of mayo, my preference.
