1 tablespoon Canola or Olive Oil 1 each large red onion -- diced 1 each large red or green bell pepper -- seeded & chopped 2 each celery stalks -- chopped 3 each cloves garlic -- minced 2 each x 15 oz. cans black beans -- rinsed & drained 1 each x 8 oz.can diced tomatoes 1 each x 14 oz. can crushed tomatoes 1 each or 2 canned chipotle chiles -- seeded & minced 1 tablespoon chili powder 1 tablespoon dried oregano 0.5 teaspoon salt |

| In a large saucepan or skillet, heat oil over medium-high heat. Add the onion, bell pepper, celery, and garlic, and cook, stirring, for about 7 minutes. Stir in all remaining ingredients and cook for 30 minutes over low heat, stirring occasionally. Remove from heat and let stand 5-10 minutes before serving. |
