2 Limes 2 tablespoons olive oil 30 ml red wine vinager 1 tablespoon Clear Honey 1 tablespoon Cayenne pepper 2 cloves of garlic, crushed 1 tablespoon Sweet Paprika 1 Large Red Chilli, deseeded and diced 4 large chicken breasts - boned & split 2 Ripe avocados 1 Plum Tomato 1 Banana Shallot, peeled and diced 1 Medium Green Chilli 2 whole baby gem, lettuces |

| 1. For the chicken marinade, place the lime juice and zest, olive oil, red wine vinegar, honey, cayenne pepper, crushed garlic, sweet paprika and diced chilli in a bowl, season with salt and pepper. Cut the chicken breast into strips and mix through the marinade to coat evenly. 2. For the guacamole slice the avocado in half and remove the stone, score the flesh into cubes and use a spoon to scoop out into a bowl. Add the tomato, shallot and chilli and season. Take a fork and start to mix the guacamole, mashing as you go, add the lime juice as the guacamole starts to come together, then add a small drizzle of olive oil. Once the guacamole is creamy but still has some texture, make the surface even with the back of a spoon. Drizzle a little olive oil over the finished guacamole and lay cling film on the surface of the mixture to keep the vibrant green colour until ready to use. 3. Heat a large frying pan with a little olive oil. Remove any excess marinade from the chicken using tongs or a slotted spoon and fry on a high heat for two minutes each side, spoon a little more of the marinade over the chicken if it starts to dry out. 4. Lay the baby gem leaves on a plate and fill with spoonfuls of the guacamole. Arrange the chicken on top and drizzle over a little of the cooking juices. Ingredients For the piri piri chilli marinade: * 1 lime, juice and zest * 2 tbsp olive oil * 30ml red wine vinegar * 1 tbsp clear honey * 1 tsp cayenne pepper * 2 cloves garlic, crushed * 1 tbsp sweet paprika * 1 large red chilli, deseeded and finely diced * 4 large skinless chicken breasts For the guacamole: * 2 ripe avocados * 1 plum tomato, diced * 1 banana shallot, peeled and finely diced * 1 medium green chilli, deseeded and finely diced * 1 lime juiced To serve: * 2 whole baby gem lettuces, leaves separated and washed * Salt and freshly ground black pepper * Olive oil |
