6 each oz. extra firm tofu, frozen, then thawed and drained 4 each cloves garlic 0.5 each of a medium onion 3 each to 4 ears fresh corn 1 teaspoon salt 2 tablespoon flour 4 tablespoon cornmeal 0.5 teaspoon baking powder 0.333333 cup chopped pickled jalapenos 1 cup grated zucchini 0.125 teaspoon black pepper, veg oil for pan |

| Squeeze all the excess water out of the tofu. Process the tofu with the garlic and onion until smooth. Mix with all the other ingredients in a large bowl. Pour into an oiled 8 in square baking dish and bake at 375 for 25-30 min. Can garnish the top with fresh or sundried tomatoes and/or jalapenos before baking. |
