Description:
Time: 20 min (10 min to prepare, 10 min to cook)
Meal type: Dinner

Ingredients:
2 each cloves garlic, crushed, oil for cooking
1 each onion, diced
375 each gram mushrooms, diced
0.5 each red capsicum, diced
0.25 cup plain wholemeal flour
1 cup of soy milk
2 tablespoon of tomato paste
0.5 cup fresh parsely (or equivilent dried)
1 each tomato, diced
500 each grams spiral pasta, cooked
Directions:
Heat oil in wok (or large saucepan) & saute garlic, onion, mushrooms & capsicum for five minutes.

Stir in flour & cook for a further 2 minutes.

Add soy milk all at once and stir until mixture thickens slightly.
Add tomato, stir throughly.

Add tomato paste & parsley until well combined.
Add pasta to wok (or add sauce to paste if using a saucepan) and stir through until heated throughly.

Now that I think about it, this recipe wasn't even vegetarian when I first found it.
I have this habit of adapting things to suit!
