Description: Red Curry Chicken
Time: 2 hr 10 min (10 min to prepare, 2 hr to cook)

Ingredients:
3 each chicken breast
2 fl oz yellow onions, chopped
1 each yogurt
2 each hot pepper
1 can crushed tomatoes
1 can diced tomatoes
2 tablespoon garlic
3 tablespoon red curry powder
1 teaspoon red pepper
10 each small red potatoes
Directions:
Red Curry
3 breasts or a mix of breasts and thighs, diced to 1" (can substitute shrimp, but add in the last 15 mins)
two sweet or yellow onions, diced
1 small yogurt (vanilla, apple or coconut)
10-15 small white potatoes or some diced red potatoes
two hot peppers (japs or serrano -- or whatever), seeded/diced
1 large can of crushed tomatoes
1 small can of diced tomatoes/drained
two tablespoons of garlic
2/3 tablespoons of red curry powder (to taste) (get it from a real indian market for better flavor)
red pepper and salt (to taste)

veg oil to cover bottom of pan
sautee onions, peppers, chix for 10 mins
Add the rest of the ingredients, bring to a boil for 5 mins
Simmer for a couple of hours
