Ingredients:
2 tablespoons Vegetable oil
1 each onion -- chopped
1 each green pepper -- chopped
1 each zucchini -- sliced
1 cup broccoli florets
2 each carrots -- sliced
1 each oz. can chopped green chiles
0.5 teaspoon garlic salt
0.125 teaspoon ground cumin
0.25 teaspoon oregano
6 each 12-inch flour tortillas
0.5 each head lettuce -- shredded
1 each tomato – chopped, salsa, guacamole
Directions:
Heat oil in a large skillet and saute onion, green pepper, zucchini, broccoli, and carrots.
When vegetables are tender, add chiles and seasonings.
Stir and simmer for 6 minutes.
Spoon into warmed flour tortillas and roll burro-style.
Garnish with lettuce, tomato, salsa and guacamole.
