Directions:
Cook the onion, bell peppers, and garlic in the olive oil over medium heat until soft.Add the diced tomatoes, blackeyed peas, and Tabasco sauce and heat through.
Arrange the rice in a large serving bowl, making a depression in the center.
Pour the vegetable mixture into the center of the rice.
Serve with cornbread or biscuits.

Directions:
Place potatoes in a large saucepan with water to cover.Bring to a boil, reduce heat to medium low, and cook until potatoes are fork tender, about 20 minutes.
Drain and return potatoes to the pot.
Set the pot over low heat and add the argarine, chipotle salsa, cilantro, and salt.
Mash until potatoes are as smooth as you like.
Taste and adjust seasonings.
