1 cup diced onions
1 each small can diced pimento
0.5 cup green onion
0.25 cup fresh chopped jalapeno, (optional)
8 ounces black eye peas
1 cup diced bell peppers
1 OZ fresh garlic, chopped
0.25 cup Italian dressing
0.25 teaspoon salt
0.125 teaspoon pepper
Directions:
Combine all items. Let marinate overnight for best flavor. Serve as a side dish or as an appetizer with low fat crackers.
