Directions:
Stir the arrowroot into 1/2 cup of cold coconut milk.Heat the rest of the coconut milk, agave and salt in a saucepan until well combined. Just about a minute.
Stir in the arrowroot mixture and stir on medium/low heat until thickened – about 5 minutes.
Stir in the coconut essence and shredded coconut and allow to cool.
Transfer to a bowl and chill in the fridge for at least a few hours (overnight is preferable) until really cold.

Directions:
1) Place the pork in the freezer for 30-40 minutes, until firm. Using a sharp knife, cut into thin strips.2) Heat the oil in a wok or large frying pan. Add the garlic. Cook over a medium heat until golden, then add the pork and stir-fry for 4-5 minutes. Add the onion slices and toss to mix.
3) Add the fish sauce, sugar and ground black pepper to taste. Toss the mixture over the heat for 3-4 minutes more.
