Directions:
1. In one bowl add diced tomatos & onion; chopped cilantro, lime juice,and California Chile Pepper. Mix well.2. In another bowl halve and pit avocado and them scoop out avocado pulp into bowl. Using a fork mask until creamy with some chunks.
3. Add tomato mixture to avocado mix well and tobasco sauce, salt & pepper to taste.
4. Serve with tortilla chips and enjoy!

5. Turn into a serving bowl, garnish with cilantro, parsley and olives.

Cut asparagus into 3 inch lengths. Cook in 2-quart saucepan in lightly salted water for 5 minutes, drain. Set aside. Season the skin side of the sole fillets with salt and lemon or lime peel. 1. Cut up and mash the inside of a ripe soft California Avocado, and discard seed and peel.2. Put this in a small bowl.
3. Add 2 to 3 tablespoons of graded Monterey Jack Jalapino Pepper cheese
4. Add 1 tablespoon of sour cream.
5. Mix well with a fork.
6. Use this to dip corn chips or put on top of salad or tacos or add to anything else.
