Ingredients:
1/2 cup canned beets, drained and minced
2 tablespoons horseradish (use 2-4 tablespoons based on preference)
8 slices crusty ciabatta bread or 4 crusty rolls
1/2 cup sliced red onion
1 can (4 ounces) sliced mushrooms, drained* *If desired, sauté in a tablespoon of oliv
2 cups shredded leaf lettuce
Directions:
In a small bowl combine beets and horseradish to make spread; blend well. To assemble sandwich, spread beet-horseradish mixture on one side of 4 slices of bread. Arrange beef, onion, mushrooms and lettuce on top. Top with remaining slices of bread.
