Ingredients:
1 each shallot, minced
0.5 cups fresh-squeezed Sunkist® lemon juice
1 tablespoon Dijon mustard
0.75 cups extra virgin olive oil
1 tablespoon salt, fresh ground black pepper
Directions:
Whisk together the shallot, lemon juice, mustard, salt and pepper in a small bowl.
Continue whisking while slowly adding the olive oil in a thin stream.
Check for seasoning and store in the refrigerator for up to one week.
Shake well before using.
Yields approximately 1 1/4 cups.
