Ingredients:
0.5 teaspoon salt
1 each medium clove garlic, mined
2 tablespoons fresh lime juice
1 each ripe mango (about 6 inches long or about 1 1/2 cups minced)
2 cups boiling water
2 tablespoons finely minced red onion
2 tablespoons fresh cilantro, optional: cayenne to taste
Directions:
Place minced onion in a small strainer over bowl.
Slowly pour boiling water over the onion.
Let sit for 5 minutes.
This will soften its bite.
Combine all ingredients and mix gently.
Cover tightly and refrigerate.
