Ingredients:
1 tablespoon fresh lime juice
1 each 1/2-inch piece fresh ginger, grated
1 each serrano chili, seeded and minced
3 each medium green onions, minced
1 each small red bell pepper, cut into 1/2 inch dice
0.5 each medium pineapple, peeled, cored and cut into 1/2 inch dice, juices reserved
0.125 teaspoon salt
Directions:
Mix all ingredients including reserved pineapple juices in medium bowl.
Cover and let stand at least 1 hour at room temperature.
