Ingredients:
2 cups ricotta cheese
1/2 cup parmeasan cheese
1/2 cup mozzarella cheese
2 each eggs
12 each manicotti shells
2 cup tomato sauce
2 tablespoon parmeasan cheese
Directions:
Combine ricotta, parmeasan, and mozzarella cheeses with salt and pepper to taste. Add eggs; beat together until smooth. Cook manicotti shells in boiling water for 18-20 minutes until they reach desired degree of doneness; drain. Fill each shell with cheese mixture. Place filled manicotti shells in square baking dish. Cover with tomato sauce. Sprinkle with 2 tablespoons parmeasan cheese. Bake in preheated 400 degree over for 20 minutes or until sauce begins to bubble.
