Ingredients:
1 tablespoon EVOO
10 slices smoky bacon, 2 of them chopped
1  small onion, finely chopped
3/4 pound ground chuck
3/4 pound ground sirloin
2 tablespoons Worcestershire sauce
1/2 cup stout beer, such as Guinness
1/2 cup sour cream
1 tablespoon prepared horseradish
3 tablespoons grainy mustard
Directions:
Place large skillet over medium heat and add 1T EVOO. While pan is still cold, add bacon. Cook bacon as pan heats up, until it is crispy and golden brown, 7-8 minutes.

When bacon is crispy, add onion and continue cooking until tender, 2-3 minutes. Using a sloted spoon, transfer mixture to large mixing bowl and let cool. Reserve pan drippings.

Lay other 8 slices bacon out onto broiler pan and bake at 325 until crispy, about 20 minutes.

Heat skillet with pan drippings over medium heat. Add ground meats to the mixing bowl with bacon and onion, and season with salt and pepper. Combine mixture with hands and divide into 4 patties.

Add patties to skillet and cook until golden brown, 4-5 minutes per side. In last minute of cooking, add Guinness to pan and cook until almost completely reduced and slightly thickened.

While burgers cook, stir together sour cream, horseradish and mustard in small bowl. Assemble burgers by lating down lettuce and red onion on each roll, then patties, then cheese, bacon and a dallop of sauce.
