2 pounds ground sirloin 1/3 pound smoked Gouda cheese, diced 1 medium onion 2 teaspoons smoked sweet paprika 1 teaspoon ground cumin 1 pinch grill seasoning 2 clove garlic, minced 1 handful flat-leaf parsley, chopped 1 tablespoon Worcestershire sauce 6 ounces beer |

| Preheat grill over medium-high heat. Place meat in bowl and add cheese. Peel onion and half it. Grage about 3-4 T onion directly over meat. Finely chop remaining onin and reserve for topping. Add spices and salt and pepper to meat. Add garlic, parsley, Worcestshire sauce and beer to meat and then form 4 large patties, making thinner at center than edges. Drizzle a little EVOO over burgers and grill 5 minutes on each side for medium. |
