2 can (7-oz) whole green chile peppers 1 lb Monterey Jack Cheese (cut in 1 inch slices) 6 eggs 4 tbsp milk 1/2 tsp 1/4cumin 1/4 tsp chili powder 1/2 tsp chopped coriander 1 package tortillas & salsa |

| Rinse and remove seeds from chiles, and drain. Stuff the chiles with strips of the cheese. Place in baking dish which has been lightly greased. (Save a little cheese to place over top.) Beat the eggs, add milk, and spices. Pour into baking dish over stuffed chiles. Place in microwave on mediam power until cheese is melted and eggs are done to taste. Serve with salsa and warmed tortillas. |
