Ingredients:
4  Boneless, skinless chicken breasts (preferrably thin cut)
4 tablespoon Crumbled Feta
1 C Italian Bread Crumbs
2 tablespoon Melted butter, to taste
Directions:
1. Preheat oven to 350 degrees and lightly spray a glass dish with nonstick cooking spray
2. Pound your chicken breasts flat between sheets of wax paper (doesn't apply if you have the thin breasts)
3. Put bread crumbs on a flat dish and press both sides of the chicken breast into the bread crumbs to drench completely
4. Spoon 1 T. (or a bit more) on to the chicken breast and fold in half (I use a toothpick to hold them closed if they seem to have trouble).
5. Drizzle butter over breasts and cook about 30 minutes or until juices run clear

The recipe calls for about 1 T. of feta per breast but I'm pretty generous since that's where most of the flavor is. I mentioned that the Tomato Basil feta is recommended but any kind will do.
