4 Boneless, skinless chicken breasts (preferrably thin cut) 4 tablespoon Crumbled Feta 1 C Italian Bread Crumbs 2 tablespoon Melted butter, to taste |
| Directions: | ||
| 1. Preheat oven to 350 degrees and lightly spray a glass dish with nonstick cooking spray 2. Pound your chicken breasts flat between sheets of wax paper (doesn't apply if you have the thin breasts) 3. Put bread crumbs on a flat dish and press both sides of the chicken breast into the bread crumbs to drench completely 4. Spoon 1 T. (or a bit more) on to the chicken breast and fold in half (I use a toothpick to hold them closed if they seem to have trouble). 5. Drizzle butter over breasts and cook about 30 minutes or until juices run clear |
