1 1/2 tablespoons olive oil 1 large onion, roughly chopped 3 stick celery, roughly chopped 1 1/2 medium 1 1/2 to 2 green bell peppers, seeded and roughly chopped 1/4 teaspoon white pepper 1/4 teaspoon black pepper 1/4 teaspoon 1/8 tsp. Cayenne pepper 1 cup long-grain rice 1 can 14 oz Tomatoes 1 large red tomato, diced 6 ounces 90 percent lean, smoked turkey sausage 3 1/4 cups sodium-reduced chicken stock 1 lb chicken breasts cut into 1-inch chuncks 1/4 cup 1/8 to 1/4 cup fresh chopped parsley |

| Directions: | ||
| 1) In a medium to large casserole, heat the olive oil over medium heat. Add the onions. celery, green pepper, and garlic, and saute, stirring often, until slightly softened, about 5 minutes. 2)Add the white pepper, black pepper, cayenne pepper, and rice, stirring to mix well. 3)Add the canned tomatoes, diced tomato, sausage, chicken stock, and chicken, and mix well. Bring to a boil. Reduce heat to simmering, and cook about 20-25 minutes, stirring occationally until the chicken is done and rice is tender. (The rice should have absorbed most of the liquid by the time it has cooked.) Stir the parsley and serve. |
