Description: There's this woman on one of those Fit/Discovery type shows, and she does this organic cooking show. I'm down with organic just like the next person, but I'm down with cheaply priced, too. Her recipe calls for everything to be organic. This is already and expensive dish. And it's cheese. This amount of cheese is going to clog your arteries whether it's organic or not. I'm also thinking if you're into organics, you're gonna substitute organic stuff anyway.
Time: 1 hr 5 min (20 min to prepare, 45 min to cook)

Ingredients:
3 cup elbow macaroni -- uncooked
6 tablespoon butter
6 tablespoon flour
4 cup whole milk
1 tsp salt
1 dash pepper
4 cup SHARP cheddar cheese, shredded
1 cup fine bread crumbs, optional
4 each tomatoes, sliced, OPTIONAL
Directions:
Preheat oven to 350 degrees.

Cook pasta until done.

In a large sauce pan, melt butter. Blend in flour. Whisk in milk. Cook at medium heat until thick. Add sal and pepper and 2 1/2 cups of the cheese (reserving 1/2 cup). Stir until melted.

Place cooked, drained macaroni in 13"x9" greased baking dish. Pour sauce in. (I stir it a little to make sure it's all incorporated.)

Top with remaining cheese. OPTIONAL: top with bread crumbs and/or tomato slices.

Bake for 35-45 minutes.
