Description: Country version of coq au vin. Serve with mashed potatoes
Time: 4 hr 45 min (30 min to prepare, 4 hr 15 min to cook)

Ingredients:
1/2 pound bacon, diced
1 each 4 - 6 pound chicken cut up (I removed skin)
1/2 cup white wine or 1/4 c vermouth & 1/4 c water
1/2 pound white mushrooms cut in half
1 cup frozen small white onion ( I used one whole onion)
6 clove garlic, chopped
3 pieces sprigs of fresh rosemary (or 1 TBSP dried)
1 tsp salt
1/4 cup water
2 tbsp cornstarch
Directions:
Cook diced bacon until crisp over medium-low heat. Transfer bacon to crock pot with slotted spoon. Pour all but light coating of fat from skillet. Add chicken and brown over medium-high heat; transfer to cooker. Pour wine into skillet and scrape up any browned bits; add skillet contents to cooker, along with mushrooms, onion, garlic, rosemary and salt. Cover and cook on low heat for 6 hours or high heat for 3 hours. Transfer chicken and vegetables to plate. Pour sauce into pan and add water/cornstarch mixture. Heat to boiling, stiring constantly until thick. Pour over chicken.
