Description: Simply serve this savory, roasted red pepper sauce over grilled or broiled finfish (tuna, swordfish, mahi mahi or any variety of finfish). With roasted red peppers on your pantry shelf, this nourishing, made-from-scratch sauce takes little effort. A good source of beta carotene (forms vitamin A) and excellent sour of vitamin C – with little fat – this sauce is a flavorful way to get the nutrient-rich benefits of “red.”

Ingredients:
2  yellowfin tuna steaks (about 1 1/2 pounds)
2 teaspoons olive oil, Freshly grated pepper, to taste
1 cup canned roasted red bell pepper
1/4 cup chopped green onion
1 tablespoon canned tomato paste
1 clove garlic clove, chopped
1/4 teaspoon to 1/2 teaspoon red pepper flakes, Parsley sprigs, for garnish
Directions:
Brush tuna with olive oil; sprinkle with pepper to taste. For every inch (in thickness) of tuna steak, broil or grill for 10 minutes. Turn once to cook evenly. Purée roasted red bell pepper, green onion, tomato paste, garlic clove and pepper flakes in a blender or food processor. Serve sauce over cooked tuna; garnish with parsley.
