1 tablespoon Ginger -- finely chopped 1/4 teaspoon salt 1/4 teaspoon Pepper (to taste) 8 each Chicken Thighs 2 tablespoon Vegetable oil 1/2 each onion 2 cups water 1 teaspoon Sugar 2 tablespoon fish sauce |

| In a small bowl, mix ginger, salt, and pepper. Rub mixture into chicken pieces and cover. Let stand at room temperature for 30 minutes. In a large skillet, heat oil over high heat for 1 minute. Add onion and cook uncovered for 2 to 3 minutes, or until tender. Stir frequently. Add chicken, water, sugar, and fish sauce. Cover and reduce heat to low. Simmer for 45 minutes, or until chicken is tender. Serve hot with rice or noodles. |
