Ingredients:
1 C ombine eggplant and pepper in bowl. Add 2 cloves of garlic, diced or pressed in garlic press
1 C ool pepper, seed and dice
1 C ool eggplant and dice (I always peel the eggplant too)
1 each Bake or roast Red Pepper til tender
1 each Bake eggplant until roasted, tender and swooshed (400 deg about 1 hr 15 min)
1 each Add 3 Tablespoons of lemon juice mix and chill
