Ingredients:
16 OZ Package Rotini Pasta
2 each Large ripe Fresh California Avocados, diced
1 cup shredded Cheddar cheese
4 OZ Cooked and crumbled Bacon
0.6875 cup mayonnaise
2 each diced tomatoes
1 teaspoon black pepper
4 cups Shredded lettuce
Directions:
1. Cook pasta according to package directions.
2. Drain and rinse noodles under cold water until room temperature.
3. Mix all other ingredients together with cooled pasta except 1/4 of the diced avocado and the shredded lettuce.
4. Refrigerate until serving.
5. Serve on top of a bed of lettuce, and garnish with reserved avocado.
6. Lettuce can be eliminated and this dish can be served as a side salad instead of a main dish.
