Ingredients:
0.25 cups olive or vegetable oil
1 each Sunkist® lemon -grated peel and juice
2 tablespoon white wine or balsamic vinegar
1 tablespoon toasted sesame seed
1 each large clove garlic, minced
0.25 teaspoon onion salt
8 each oz. fettuccine noodles, cooked and drained
0.5 each lbs. tiny cooked shrimp
10 each oz. fresh spinach, washed, well-drained and cut into thin strips
1 each medium carrots, shredded
1 each unpeeled medium zucchini, shredded
2 each green onions, cut in thin strips
3 tablespoon chopped cilantro to taste fresh ground black pepper
Directions:
In large bowl, combine oil, lemon peel and juice, vinegar, sesame seed, garlic, and onion salt.
Add noodles and shrimp; toss well.
Cover and chill for 2 hours or longer; stir occasionally.
To serve, add remaining ingredients and toss well.
