Ingredients:
0.5 cups cooked (1/2 cup dry) or 1 can (15 oz) garbanzo beans, drained
0.5 cup thinly sliced red onion
0.5 cup diced tomato
0.5 cup chopped green bell pepper
3 tablespoon rice vinegar or apple cider vinegar
2 tablespoon Lemon juice
2 teaspoon olive oil
2 tablespoon Minced garlic
2 tablespoon chopped fresh parsley, salt and pepper to taste
Directions:
Combine all ingredients in a large bowl. Let marinate at room temperature several hours then refrigerate.
