Ingredients:
4 each oz. Arugula, stems removed
1 each oz. mint leaves
1 each lb. chicken breast, grilled, diced ?"
12 each oz. Sunkist® grapefruit segments
4 each oz. Feta cheese, crumbled
4 each oz. Nicoise olives
4 each oz. Sunkist® Grapefruit Vinaigrette, Sunkist® GRAPEFRUIT VINAIGRETTE
1 cup freshly squeezed Sunkist® grapefruit juice
1 teaspoon Sunkist® grapefruit zest
0.5 cups Balsamic vinaigrette, prepared
Directions:
Lay 1 oz. arugula and ¼ oz. mint leaves evenly over large chilled salad plate.

Arrange 4 oz. diced chicken and 3 oz. Sunkist grapefruit segments on top of greens.

Sprinkle with 1 oz. feta cheese and 1 oz. olives.

Drizzle over all with 1 oz. of Sunkist Grapefruit Vinaigrette.

Serve immediately.

SUNKIST GRAPEFRUIT VINAIGRETTE:

Whisk Sunkist grapefruit juice, Sunkist grapefruit zest and vinaigrette together.

Chill a minimum of 2 hours. Hold refrigerated until service.
