1 lb Orzo pasta 2 cups Cherry Tomatoes cut in half 16 OZ Greek Feta Cheese (I used low fat and half the amount) 1 cup Green Onions, chopped 1/2 cup Pine Nuts, toasted (preheat oven to 350, let toast for 8-10 min stir halfway) 1 package Garlic Expressions Salad Dressing (found at Central Market) 2 tbsp Finely Chopped Parsley 2 tbsp Finely Chopped Basil |

| Bring water to a boil and cook the orzo until tender but firm to the bite, stirring occasionally. Drain and rinse with cold water to stop from cooking. Transfer to a large bowl. When the orzo is cool, mix orzo, tomatoes, feta, green onions, pine nuts and garlic expressions dressing until well coated. Season to taste with salt and pepper. Toss in the parsley and basil. Serve at room temperature. *If you plan to make this ahead of time you can add a little olive oil to keep the orzo from sticking together and store the pasta in the refrigerator. I would wait until couple of hours before you intend to serve the salad before adding the rest of the ingredients. |
