Ingredients:
0.5 cup lentils, uncooked
0.5 cup water
1 cup brown rice, uncooked
0.5 cup fat-free Italian salad dressing
1 each tomato diced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
0.5 cup chopped onion
0.5 cup chopped celery
Directions:
Rinse lentils and cook in water for 20 minutes or until tender; drain. Check lentils for tenderness after 15 minutes of simmering; they should be tender and firm, but not soft. While lentils are simmering, cook brown rice according to package directions. Combine remaining ingredients. Mix with lentils and rice; toss, and chill for 2 hours.
