Ingredients:
1 medium head Boston or Bibb lettuce, leaves seperated
2 medium red tomatoes, cut into wedges
1 cup diced cucumbers
1/4 cup chopped red peppers
1/4 cup minced red onions
1/2 cup diced pepper-jack cheese
1/2 cup prepared balsamic vinaigrette
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1 medium lemon, zested and juiced
Directions:
1. Place lettuce leaves on serving platter. Arrange tomato wedges on platter to create flower shape.
2. In bowl, combine cucumbers, red peppers, red onions, and cheese; spoon into center of tomatoes.
3. In bowl, whisk together vinaigrette, parsley, basil, 2 tbs. lemon juice and 1/2 tsp. lemon zest. Drizzle dressing over salad just before serving.
