* Put the tahini into a bowl and gradually beat in the water and lemon juice; the mixture will be lumpy at first, but will gradually get light and fluffy as you beat in the liquid.* Add the garlic if you are using this, and some salt and pepper.
* Chopped herbs are nice in this too.
* Use as ordinary mayonnaise

* In a bowl, stir together all the ingredients, making sure they are well mixed.* Adjust the amount of soya sauce and seasoning to suit your taste.

* Stir in the parsley or chives to give colour.
* Serve chilled. This dressing is best if used within a few days of making.

Cut lid off of green bell pepper and clean out the inside.

Combine all of the ingredients, except for the juice and guava, in a large serving bowl. Peel and slice the guava into quarters and place in a blender with the orange juice concentrate. Puree until smooth. Pour the mixture through a sieve to remove the seeds and pour over the fruit salad.
