1/4 cup EVOO 3 cloves garlic, sliced 1 red onion, finely chopped 1 head cauliflower, chopped 1 cup broth 3/4 cup grated Romano |

| Cook pasta, and reserve 2 ladles of pasta water. Heat a deep skillet over medium-high heat with EVOO. dd garlic and cook 3 minutes, then remove. Add onions and cook 5 minutes, then add cauliflower and broth. Cover pan and cook 15 minutes. Add 1-2 ladles of pasta water and mash the cauliflower with back of wooden spoon or potato masher. Add pasta and cheese to cauliflower mixture and toss to combine. Season with salt and pepper. |
