2 teaspoon sugar 0.5 teaspoon salt 1 tablespoon chopped fresh ginger 1 each small serrano or chile jalapeno, with seeds, chopped 1 each clove garlic, peeled 2 cup packed fresh mint leaves 2 tablespoon rice wine vinegar, or to taste |

| Directions: | ||
| 1. Place sugar and salt in blender, or mini food processor. With motor running, drop in ginger, chile and garlic. Process until minced. 2. Add mint, and vinegar. Pulse until finely chopped, stopping to scrap down sides if needed. Transfer to a small serving bowl. Serve within 30 minutes. |
