Ingredients:
4 medium Eggs
1/2 cup Flour
4 tablespoons Butter, softened
1/2 cup Heavy cream
2 can Cream-style corn (14 3/4 -oz)
1 small Red & Green bell pepper, cored and diced
1/3 cup Chopped white or red onion
Directions:
1. Preheat oven to 350. Spray 2 1/2 quart casserole or 9x13-inch baking dish with cooking spray.
2. In a large mixing bowl, beat eggs, flour, butter, and cream. When blended, stir in the corn, peppers, and onion. Stir to combine. Pour into prepared casserole.
3. Bake for 45 to 50 minutes, until fairly firm in the middle. If the top browns too quickly, cover with foil.
