1 teaspoon Vegetable oil 1 teaspoon unsalted margarine 1.25 lb all purpose potatoes, peeled, cooked and cut into 1/2 cubes 2 onions, minced 1/2 C Chicken broth 1/2 teaspoon salt 1 pinch Freshly ground black pepper |

| In a large skillet, heat the oil and margarine. Saute the potatoes and onions until lightly browned, about 5 minutes. Add the broth, salt and pepper. Reduce the heat and cook, patting the mixture down and turing it over as it formes a crust about 15 minutes longer. | ||
